Whole30 - Day 8

Day 8. Monday, April 21.

Where I Went:

Home & Physical Therapy & walk with Max the dog

Breakfast:

Leftovers from yesterday’s breakfast. It reheated surprisingly well.

Lunch:

So it doesn’t photograph well, but this is now my favorite Whole30 dish I’ve ever made. It’s rich & creamy. It’s vegetable-forward, with spaghetti squash & spinach taking the front seat. And there’s pesto in it, which is my favorite flavor.

Not so surprising is that this recipe is from PaleOMG, where I’m still getting about 90% of my recipes. Artichoke Lemon Pesto Chicken Pasta.

Dinner:

Dinner used the leftover pork ribs from yesterday & made them into a Faux Pho. (Recipe from the cookbook Well Fed 2.) C had vermicelli noodles in his (larger) bowl. I made zucchini noodles for my bowl. It was good, but I remember it being better last time. So maybe I was off in my cooking.

Woke up feeling:

I’m nervous at how good I’m feeling when I wake up… waiting for something to go wrong. But so far, it’s all been great sleeping & great waking.

Fell asleep feeling:

Just like the rest of the time, once 9:30 hit I could barely keep my eyes open. I stayed up until about 10:30 to try and keep my normal(ish) schedule.

Cravings:

None. Though I do miss cocktails right about now.

Whole30 - Day 7

Day 7. Sunday, April 20.

Where I Went:

Stayed home & a walk with Max the Dog.

Breakfast:

This was a good one. I cooked PaleOMG’s Mexican Hash & it was insanely good & amazingly easy. We each ate 2 eggs & couldn’t finish the third.

Lunch:

We slept in & “breakfast” was actually eaten around noon. I ate half a honeydew melon around 3-ish to hold me over until dinner.

Dinner:

We made Well Fed 2’s Chinese-spiced Ribs for dinner, with an Asian Cucumber Salad. I doubled the recipe so we could have lots of leftovers, though if we would have let ourselves, we would have eaten all 2 lbs of it. These ribs are amazingly easy to make & taste incredible.

All in all, it was a successful food day :)

Woke up feeling:

Well rested. I read in bed until about 10, when C was ready to get up.

Fell asleep feeling:

Very happy with the day! And exhausted.

Cravings:

None. Though I would have loved a mimosa with breakfast.

Whole30 - Day 6

Day 6. Saturday, April 19.

Where I Went:

Home, Dog Park, The Backyard (bar/restaurant), Grocery Store & Stage Center for Othello

Breakfast:

Breakfast was a collection of leftovers — half of a baked sweet potato with ghee on it, and the rest of the chorizo meatballs. I added some blueberries on the side.

Lunch:

After running around the dog park, we went to a dog friendly restaurant bar & I ate what is called “Caveman Cereal”. I had to request for the corn to be kept off. And I also omitted the mushrooms because I can’t stand mushrooms. Bonus: I added avocado slices on top. So what was left was beef cubes, green bell peppers & onions in a bowl. Pure heaven.

I also “spoiled” myself with club soda & an orange slice. It was surprisingly delicious. 

Dinner:

Again, left overs. I had the remaining ribs & coleslaw from yesterday.

Woke up feeling:

So, very well rested & completely at peace with this. This Whole30 has been so much easier so far. While I’m only in my first week, I can already tell I’m approaching it with more ease than before.

Fell asleep feeling:

After the play, I had a glass of Jasmine Green tea & sat outside with Heather talking for awhile. Great way to end a night. I stayed up until about midnight reading a book I couldn’t get enough of & then fell into a deep, glorious sleep.

Cravings:

Wine.

Grocery Store:

I didn’t get around to grocery shopping for the weekend on Friday, and tomorrow is Easter & all the stores will be close. So I had to go to HEB — aka: the BIG grocery store — for this week’s groceries. It’s not my favorite, but sometimes it has to be done. I spent $150 on groceries, which will last me from Sunday breakfast through Friday lunch (for 2 people). I stopped & picked up two dozen farm fresh eggs from Farm Patch for $10.

Again, some items were staples (like $10 on almond flour & $10 on cashew butter) that will last me the entire month.
